I think it’s safe to say I have a new-found affinity for my air fryer. And despite the year it spent sitting in a box, I am now happily putting it to good use, and getting it well-acquainted with the rest of the family. So here’s to warm welcomes, crispy veggies, and a season filled with endless amounts of cozy- not to mention avocado, for good measure.
Harvest Bowl with Air- Fried Butternut Squash
GF, V, Paleo, Grain Free
Here’s what you’ll need:
1/2 cup cubed butternut squash
1/2 avocado topped with bagel spice
1-2 tsp. coconut aminos (I used Bragg’s)
a few small handfuls of spinach
hot house cucumber
Everything But the Bagel Seasoning (from Trader Joes)

Here’s what you do:
Adjust your air fryer setting to “fry” (this should be about 400 degrees), and place you squash in the tray. Hit the button, and leave the squash to cook for about 16 minutes, flipping half way through. Fry until golden, crispy and fluffy.
Add a few handfuls of organic spinach to a small pan along with the coconut aminos and lemon. Lightly sauté over medium heat until wilted.
Transfer your greens to a bowl, then add the squash, avocado, additional veggies ( I love cucumbers for crunch), and walnuts. Finish with a squeeze of lemon, an extra drizzle of coconut aminos and pinches of salt, pepper, and spices. Enjoy!
