Woke up looking for the ultimate bowl of cozy this morning, and, well, I think I just might have found it. I’ve always loved carrots and I absolutely adore oatmeal, but, I’ve never had them together quite like this... until now.
Carrot-Coconut Overnight Oats
GF, V, Paleo, Low Sugar (Serves 1)

Here’s what you’ll need:
1 cup nut milk
1/2 cup gf oats
1 T chia seeds
1 T unswtd. shredded coconut
2 tsp. Suncore Foods Orange Carrot powder
1 tsp. coconut nectar
sea salt & pumpkin pie spice to taste
Here’s what you do:
Mix all ingredients together in a small container and place in the fridge to set overnight. Enjoy in the morning served warm, with nectarines, blueberries, hazelnuts and some sunflower seed butter on top.
