Carrot-Coconut Pumpkin Spiced Oats

Woke up looking for the ultimate bowl of cozy this morning, and, well, I think I just might have found it. I’ve always loved carrots and I absolutely adore oatmeal, but, I’ve never had them together quite like this... until now.


Carrot-Coconut Overnight Oats

GF, V, Paleo, Low Sugar (Serves 1)

Here’s what you’ll need:

  • 1 cup nut milk

  • 1/2 cup gf oats

  • 1 T chia seeds

  • 1 T unswtd. shredded coconut 

  • 2 tsp. Suncore Foods Orange Carrot powder

  • 1 tsp. coconut nectar

  • sea salt & pumpkin pie spice to taste

Here’s what you do:

Mix all ingredients together in a small container and place in the fridge to set overnight. Enjoy in the morning served warm, with nectarines, blueberries, hazelnuts and some sunflower seed butter on top.

Currently curling up with a big bowl of cocoa-banana coconut oatmeal for breakfast, because nothing sounds cozier on a cold Sunday... plus sometimes, you just need a little chocolate. 👌🍫🍌Today I used @earnesteats probiotic coconut oats mixed with chocolate @hemplete protein, almond milk, a little cinnamon, and topped everything off with fresh banana, @hukitchen chocolate almond hunks, plus a little drizzle of @grounduppdx cinnamon snickerdoodle almond butter on top. 🤤 I still have a ton of work to get done in my new home, but I think I’m going to stop by a local farmers market this afternoon & some local nurseries too... and I seriously can’t wait to go exploring. 🌿🤸‍♀️Happy Sunday Everyone! #hanmadebyhg
It’s been quite an emotional week for me to say the least. 💫 Moving is hard. Relocating, and adjusting to a new city on your own is unbelievably challenging... especially in the middle of a torrential storm. 🌩 🌩 Suffice to say when it rains it really does pour, but, it’s moments like these that remind me to trust the fact that despite the clouds and a sky filled with grey... there is always, always room for light. And, I think I’m starting to see it— starting with my first meal in my new home: herbed chickpeas marinated in avo oil, sumac, dill, fennel seeds & lemon, steamed organic california kale, a 7-min. organic egg, crunchy cukes, chopped red onion, and an extra drizzle of oil on top. So many things are about to change around here... but, I have no doubts they’ll be bolder and brighter than ever before, because I will always have the ability to make them that way. 🙏✨#hanmadebyhg

Day 2 of my move to SD is well- underway... and despite my feelings of needing to get everything done all at once (and judging myself for having bags and boxes and spices—yes, spices, sprawled out all over my floors), I’m reminding myself to take a deep breath, and trust that these things will slowly come together as they’re meant to... one day at a time. 😌✨ In the meantime, one of the few things I can manage to assemble without completely overwhelming myself is a creamy bowl of chaga-cinnamon oats. 🤤 This one happens to be topped with organic blackberries, shredded coconut, a huge scoop of @sunbutter for extra protein... and a few sprinkles of oats & extra seeds on top, for crunch.👌Happy Tuesday Everyone! #hanmadebyhg #sunbutter
It’s official!!! I finally made it to San Diego!☀️Yesterday was one of the most hectic, emotionally-charged, tear-filled (happy and sad) days for me... but, I truly couldn’t be happier to finally be back in a town that has always felt like home to me. 🙏😌 I know the next few weeks are going to continue to challenge me to adjust to a new routine, and cope with the anxieties & stress of getting settled... but, I’m embracing these hurdles as  opportunities for me to work on letting go of control, so I can open myself up to embrace new experiences, and really start living out the next phase of my journey without fear. ✨Throwing it back to one of my favorite comforting meals while I’m getting situated: air-fried butternut mixed with avo, cukes, asparagus, coconut aminos, lemon, walnuts and greens... and seriously cannot wait to get back into my groove in the kitchen. 💃 Stay tuned, and Happy Monday!!! #hanmadebyhg
Wow. And just like that, it’s my final, full day living in LA.✨I have so much to be grateful for since moving here a little over a year ago— getting my period back after almost 6 years, building friendships with some of the most driven, intelligent & supportive women I have ever known... and dynamic, fast-paced work that has allowed me to create a unique voice, cultivate a community, and nourish connections through experiences— with my written words, spoken conversations, and of course, occasional puns.✨
These past 15 months have been some of the most challenging, and enriching months of my life, but to be honest, I’ve never quite felt settled here... because I feel like I have been drifting from place to place searching for a solid foundation to ground myself into ever since my mom passed away.✨
San Diego is a place that holds some of my happiest, personal memories along with a few cherished moments with my mother, and my father... and although carry these moments in my heart wherever I go, I have been feeling this unbelievable pull to come back to the physical place I experienced them for the very first time. San Diego not only represents my past, but, it also represents my future. I’ve never been more scared to make a move this, but trusting my heart gives me the most overwhelming sense of comfort I have ever experienced. And finally, I feel like I’m coming home. ❤️🏠🌊 #hanmadebyhg

All I want to do on a cold, rainy morning is curl up with a big bowl of Cinnamon Cacao Overnight Oats... so this seems like a pretty cozy place to start 🤤✨:
1 cup dairy free milk
1/3 cup gluten free oats
1 scoop vanilla @nuzest_usa 
1 T unsweetened shredded coconut
1-2 tsp raw cacao powder
a few pinches of cinnamon *Add all ingredients to a small container, and mix well until incorporated. Add extra water or milk as needed, and sweetener to taste. Place in the fridge to soak overnight, and serve warm first thing the morning. Top with bananas, walnuts, a big swirl of @georgiagrinders almond butter, extra coconut, and plenty of extra cinnamon on top.👌Happy Saturday!! #hanmadebyhg
Anyone else ever wish watermelon radishes actually tasted like watermelons?? 🍉😂🙏 Pretty sure I secretly hope for this every time I bite into one (guess it’s not such a secret now)... but even without the fruit, this breakfast bowl still had the perfect hint of sweetness balanced with just the right amount of savory. 🤤 Sautéed spinach & butternut squash with @chosenfoods garlic avo oil, scrambled pasture-raised eggs topped with @seasnax for a pop of umami, juicy watermelon radishes, heirloom sunflower sprouts, a big squeeze of lemon, and a quick sprinkle of sesame on top.👌✨Happy Thursday Everyone! #hanmadebyhg
