So I think I just started baking again... or at least, I’m trying to. It’s something I used to do with my Mom all the time when I up was growing- something I’ve sort of been avoiding for the past 6 years since she passed away because I felt guilty.
My mother was by no means conscious about her diet, she did not eat clean, and if you were to ask her to name a favorite fruit, she probably would have said “apple pie”. But damn. She could bake- especially when it came to cookies. I’ve been thinking about her a lot lately, and missing her. But at the same time, I’ve also been feeling really inspired by another woman- Nicole Modic, aka, @kalejunkie ... who not only creates pure magic in her kitchen & mixing bowls, but also happens to be an incredible mother. Full of realness, full of wit, full of strength, and, full of love for family. So today, here’s my spin on her paleo shortbread thumbprint cookies, and an ode to my mom Judy, who loved chocolate more than anything.
Coconut Cashew Shortbread Thumbprints
GF, V, Paleo: (Makes 6-8 )
Here's what you'll need:
- 1 cup coconut flour
- 1/4 cup coconut oil
- 2 T maple syrup
- 1 T Artisana Organics cashew butter
- a pinch of flax, cinnamon & sea salt
- and cashew butter dark chocolate from Hu Kitchen
Here's what you do:
Mix ingredients until combined and refrigerate for 20 minutes. Then, use a spoon to form cookies on a baking sheet, make a thumbprint, and bake at 375 for 10 minutes. Remove from oven, and gently press down chocolate squares until melty. Devour!
